Caviar names explained

The different names that caviar is given depend on the sturgeon species it’s coming from.

The sturgeons have common names and scientific names.


It’s important to know the scientific name of the caviar you are looking to buy, or its species code, because it will enable you to make sure you’re actually buying what you think you’re buying. Do you know how to read a caviar label?


A common name, such as Russian Sturgeon/Russian Caviar or Siberian Sturgeon/Siberian Caviar, does not mean that it was actually farmed in Russia or Siberia. They are just names that were given because those species were originally found in those regions. To take another example: a French Bulldog that you find in an American home was not necessarily born and raised in France, despite the species' name.
