Caviar prices first depend on the species, as some species are more rare, or take longer to produce. The second factor is the quality: a same species of sturgeon can produce different quality levels. Some eggs are bigger, the flavor is more pronounced, etc. Some producers work on the maturing process to offer different variations of a single species and offer a different price depending on the maturation stage. The other factor that influences the price is simply the decision of the brand or the reseller.
Let's take the example of a Baerii (acipenser baerii) , a fairly easy species which takes around 6 to 8 years to produce. The public might not know this species name as well as Oscietra or Beluga, but it’s the most popular species you will find on the market, often under different names.
Let’s do a benchmark on the Baerii species and look at the price for a tin of 50 mg. For comparison reasons, I am taking examples only from e-stores that sell caviar in Euro. When those brands sell different Baerii qualities, I take the most affordable one. (Benchmark accurate on June 27th 2019)
Calvisius Siberian Royal 50gm, 115 €
Caviar De Neuvic Baeri Signature 50gm, 110 €
Gourmet House Royal Baeri 50 gm, 56 €
Kaviari Baeri Fermier 50gm, 115 €
Prunier & Caviar House Prunier Tradition 50gm, 90 €
Petrossian Baïka® Royal 50gm, 100 €
As you can see, it varies a lot from one brand to the other even thought they are selling a caviar originating from the same species of sturgeon.
Caviar prices obviously vary depending on the size of the tin and the type of caviar, therefore it's very difficult to say how much caviar costs. It ranges from about 20$ for a tin a 10gm, to 30000$ for a kilo of Almas caviar.
