What is Caviar?



Let’s start by the most basic question. It’s pretty simple : we call Caviar the salt-cured roe from a fish called the Sturgeon.

Now, there are different types of caviar:

  • Russian caviar

  • Oscietra

  • Siberian Caviar

  • Beluga

  • Sevruga

  • Etc;

All the types of caviar mentioned have in common that they are coming from different species of sturgeons. Roe coming from any other fish is NOT caviar. Since the public is pretty much unaware of the fact that caviar is supposed to come from sturgeons, many shops and restaurants take advantage by selling cheaper fish roes as “Caviar”, as it sounds and sells better.
